Grape harvest:
by hand, mid-October
Winemaking:
Perfectly ripe grapes are destemmed and macerated for up to 18 days. After malolactic fermentation the wine is left to mature in barrique barrels for at least 3 years. Then it is moved into large oak barrels, where it ages until bottling.
Aging potential:
10 years
Colour:
Intense deep ruby with pomegranate glints
Aroma:
Delivers aromas of ripe cherry, plum jam, green pepper, dark chocolate and undergrowth, evolving towards a sophisticated note of wood.
Taste:
Rich and full-bodied, with notes of kirsch-soaked cherries, dark chocolate and tobacco. Wonderful, lingering finish accentuated by fine, velvety tannins.
Food and wine pairing recommendation:
Pairs well with beefsteaks and steaks, particularly if complemented by peppered and onion sauces, as well as truffles. It makes also a great accompaniment to game.
Opportunities:
Lunch with friends, Socializing, Gift, Romantic dinner, Celebration
Serving temperature:
16–18 °C
