Winemaking:
For the making of this wine, destemmed grapes are macerated from 6 to 10 days. Following the alcohol fermentation and biological deacidification, the wine matures partially in stainless steel vats, and partially in large wood barrels.
Colour:
The wine has an intense ruby red colour with shades of brick-red.
Aroma:
Ripe notes of red fruit, cherry brandy, forest undergrowth, leather, and green pepper.
Taste:
An entire range of ripe forest fruits lies in this pleasant, soft taste, which is nicely balanced with tannins and a beautifully ripe finish.
Food and wine pairing recommendation:
Meat dishes, game meat, sheep and goat meat, hard cheeses with stronger sauces.
