Soil type: Eocene flysch, marl, sandstone and sandy loam soil
Location: Baredi, Prade, Škocjan, Kortina, Sečovlje, Labor
Grape harvest: Machine harvested and hand-picked in September
Winemaking: Destemming of grapes is followed by 4–6 days of maceration. Following the alcohol fermentation is the natural softening of acids, called biological deacidification, making the wine’s flavour even more velvety. The wine is then matured in stainless steel vats until bottling.
Colour: This wine has an intensive ruby red colour with enhanced purpled shades, which are even more distinct in its youth.
Aroma: The Refosco wine is consistently impressive with extremely complex and intensive floral notes of blackberries, raspberries, and blueberries.
Taste: The Refosco wine, with its soft and rich fruit and its noble characteristics of pleasant tannins and a long finish, is a nice companion to rich dishes.
Food and wine pairing recommendation: Refosco goes nicely with cold cured meat products, red meat, and grilled meat dishes.
Opportunities: Lunch with friends
Serving temperature: 14–16 °C
