RED WINE. A FULL-BODIED WINE OF MAGNIFICENT COLOUR
A confident, passionate, incisive wine made from red grapes. Choose from indigenous Refosco of Koper, Cabernet Sauvignon, Merlot, Shiraz, Cabernet Franc, Pinot Noir, and Cipro. About the production: the mashing process is followed by maceration (several days), when the grape juice is in contact with the skins of the grapes This results in a more pronounced extraction of colour, aromas, and other substances from the grape berry into a priceless must.
WHITE WINE. LIGHT-BODIED AND GOLD-COLOURED WINE
A calm, loyal, fragrant wine made from white grapes. We are proud of our indigenous Malvasia and Yellow Moscato, Chardonnay, Pinot Gris, Pinot Blanc and Sauvignon. About the production: as a rule, we do not macerate our wines, if we do, it takes a short time at a lower temperature. The grapes are pressed into the first-class must which is then cleared. After fermentation, the so-called 'young wine' is obtained, which is carefully nurtured into a wine of the desired quality with fruity freshness.
ROSÉ WINES. A MISCHIEVOUS WINE OF DELICATE COLOUR
A spontaneous, honest, modern wine made from the indigenous variety of Refosco and from Merlot and Maločrn varieties (in English: Slightly Black). We produce sparkling and still rosé, the latter made from red grapes, applying the white wine production method. This wine making technique does not entail the maceration of grapes, or when macerated, the maceration lasts for a very short time so that the typical colour is extracted.
SPARKLING WINES. PLAYFUL WINE WITH A COLOUR OF FRESHNESS
A sociable, original, eloquent wine made from white or red grapes. We produce a wide range of sparkling wines branded Capris using the Charmat method, as well as sparkling wines made using the traditional process. This means that fermentation and maturation take place in a bottle, which can take several years, while with the Charmat process, our sparkling wines mature for three to six months in special high-pressure tanks. Both processes require the production of a base wine, for which grapes of the appropriate maturity and the gentlest form of processing are chosen.
SWEET WINES. A SPECIAL WINE WITH A UNIQUE COLOUR
From the sweet Moscato to the late-harvest Malvasia, the sweet Refosco and the indigenous speciality of Cipro, you'll find quality, premium, creative wine as the icing on the cake. Wines are classified in different categories, one of this includes sugar content. In this category, there are dry, half-dry, half-sweet and sweet wines. A sweet wine has 45 grammes and more of unadulterated sugar per litre. The right method and the timing of the harvest often give these wines a special quality.
